Chicken nuggets you get from restaurants or store-bought frozen chicken nuggets are not keto friendly. These chicken nuggets contain wheat flour, bread crumbs and other ingredients that are high in carbs. Instead, you should make your own keto friendly chicken nuggets which are very low in carbs.
Ingredients for keto nuggets
You can make these low-carb chicken nuggets with easily available simple ingredients. The ingredients you need are:
- Chicken Breast – Breast of a chicken is the highly suitable meat to prepare delicious and juicy chicken nuggets. You can also use chicken thighs or ground chicken to make nuggets.
- Almond Flour – Almond flour is high in protein and low in carbs, thus it is a nutritious alternative of wheat flour and breadcrumbs.
- Permesan Cheese – It is an Italian cheese made from cow’s milk. Grate it properly before adding it in the recipe.
- Eggs – Will help in coating.
- Oil – Use avocado or coconut oil
- Salt
- Oregano
- Paprika
- Garlic Powder
Recipe Variations
You can try walnut flour or sunflower seed flour in replacement of almond flour. We don’t recommend to use coconut flour to be used in this recipe however it can be used too.
Crushed pork rinds are also a good option for coating which are even more less in carbs.
You can also use avocado oil mayonnaise instead of eggs.
Instructions to make keto chicken nuggets
Chicken prepping and breading
- Cutting of chicken: Cutting the chicken in proper size is highly recommended to maximize the taste. If you cut the chicken in very small size, the chicken will be cooked earlier than coating. Similarly if the nuggets size is larger, your coating will be cooked earlier than chicken. So, the ideal size to cut a nugget is 2 (5 cm) inches in length while 1 inch (2.5 cm) wide from a strip.
You can also soak the chicken in vinegar to boost the taste but you can skip it due to lack of time. Minimum soaking time is 30 minutes, but you can soak it for a few hours to add some more taste. - Breadcrumb mixture: Put almond flour, parmesan cheese, oregano, garlic powder, salt, pepper and paprika powder in a bowl and prepare a mixture of these ingredients.
- Eggs Mixture: Whisk the eggs with a fork in separate bowl to create an egg mixture.
- Complete Coating: Put 4-5 pieces of prepared chicken in the egg mixture and shake well until chicken is properly coated with egg mixture. After that dip the egg-coated chicken in breadcrumb mixture and coat it with breading.
- Fry: When you have completely breaded the chicken, your final step is to fry the chicken. You can cook it on stovetop in a frying pan. Add the oil (avocado oil or coconut oil) in frying pan and heat it on a medium-high heat. Fry each side of your nuggets for 4-5 minutes until they become golden brown and crispy. You can cut a nugget with a knife to check if it is properly cooked inside. If its inner colour is pinkish fry it more until it becomes white and juicy inside.
