This easy to prepare and delicious keto egg salad is a protein rich meal. You can have it in lunch or as an easy snack. Enjoy this creamy egg salad with bacon, lettuce or avocado but use only eggs if you’re on a 3-day or 5-day Egg Fast.

Eggs are a great source of protein and fats. Due to high in fats and low in carbs eggs are naturally keto friendly. You will enjoy it more when served on lettuce wraps or sandwiched between keto bread.

Ingredients

Keto egg salad contains a very few and easily available ingredients. You’ll find most of the ingredients already at your home.

  • Eggs: You need hard boiled eggs which are larger in size. Eggs laid at least 7 days ago will be easier to peel.
  • Mayonnaise: Use sugar-free mayo made with avocado oil or mustard oil. Avoid the mayonnaise that contain sugar or inflammatory vegetable oil.
  • Dijon Mustard: Dijon mustard is traditional french mustard. You can use yellow mustard if you want. Dijon is intense and sharp in taste while yellow mustard is milder.
  • Lemon Juice: Use fresh lemon juice.
  • Salt & Pepper: You can use sea salt or kosher salt whichever you want. Also add freshly ground black pepper according to your taste.
  • Optional Add-Ins: You can use celery, bacon, chives and/or chopped avocado to make some tasty variations.

Instructions to make the keto egg salad

This low carb egg salad is very simple and easy to prep. Below is the step by step guide on how to make this delicious egg salad;

  1. Hard boil the eggs. Use at least seven days older eggs which are easy to peel. Put eggs in a saucepan and add water until eggs are covered by 1 or 2 inches. Boil the eggs on medium heat for 10-12 minutes.
  2. Cool, peel and chop the eggs. After boiling, place the eggs in cold water for a few minutes to make it easy to touch and peel the eggs. Chop the eggs in a size you want. Its totally up to you if you want to chop the eggs in smaller size or a larger size.
  3. Make a paste by mixing mayonnaise, lemon juice, mustard and optional add-ins you decided to add. Add some salt and pepper for taste.
  4. Pour the mixture on the chopped eggs and stir until fully combined.

How to store the egg salad

Store it within two hours after prepping the salad. You can store it in an airtight container in a refrigerator. We do not recommend to freeze it due to the presence of mayonnaise and eggs. The keto egg salad can be stored for 3 days in refrigerator.
